    Syrian cauliflower salad tossed with tangy pomegranate molasses and parsley

    If you've been here for a while, you know how much I love sharing old, little-known Syrian delicacies. This recipe is no different. A tangy salad made of fried cauliflower tossed with pomegranate molasses and parsley that is eaten with pita bread.

    I grew up eating this tangy dish with my father. We'd usually eat it for dinner with pita bread and black tea.

    Ingredients

    You only need a few ingredients to make this unique dish. You will need a head of cauliflower, one bunch parsley, pomegranate molasses, olive oil and vegetable oil for frying. The pomegranate molasses is intense enough that I rarely have to add salt, but you can taste and adjust as needed.

    Ingredients
      

    • 1 head cauliflower
    • 2 cups vegetable oil for frying
    • 1 bunch parsley chopped
    • ⅙ cup olive oil
    • ¼ cup pomegranate molasses
    • salt to taste

    Instructions
     

    • Directions
    • In a large pot, heat oil over medium-high heat.
    • Chop cauliflower into florets.
    • Deep fry cauliflower pieces in batches until golden, about 6-8 minutes. Drain on paper towels.
    • In a mixing bowl, add the parsley, olive oil, pomegranate molasses and salt and mix.
    • Serve room temperature. Store leftovers in the fridge for up to four days.

    • - 1 رأس قنبيط زهرة
    • - 2 كوب زيت نباتي للقلي
    • - 1 ربطة بقدونس، مفروم
    • - ⅙ كوب زيت زيتون
    • - ¼ كوب دبس رمان
    • - ملح

    التعليمات
     

    • في وعاء كبير، سخِّني الزيت على نار متوسطة الارتفاع
    • قطِّعي القنبيط إلى زهيرات صغيرة
    • اقلي قطع القنبيط جيداً على دفعات حتى تتحول إلى اللون الذهبي، لحوالي 68 دقائق. واتركيها تجف على مناشف ورقية
    • في وعاء المزج، أضيفي البقدونس، وزيت الزيتون، ودبس الرمان، والملح، وامزجي جيداً.
    • تقدَّم في درجة حرارة الغرفة. اتركي الباقي في البراد لمدة لا تتجاوز أربعة أيام.
