Tender heart-shaped pasta cooked in beet juice with a medley of ripe veggies, olives and feta cheese that are tossed in a Greek dressing for the perfect light lunch or side dish.


Valentine Greek Pasta Salad
Ingredients
- 1 liter beet juice
- 2 cups heart-shaped pasta
- ½ red onion
- ½ green bell pepper
- ½ red bell pepper
- ½ cup sliced black olives
- ¼ cup feta cheese
- 2 cloves garlic
- ¼ cup Greek salad dressing
- 3 tablespoon olive oil
- 2 tablespoon vinegar
- 2 tablespoon dried oregano
- ¼ teaspoon salt
Instructions
- Cook pasta in beet juice for about 8 minutes, or until al dente.
- In the meantime, dice onions, bell peppers and feta cheese. Toss vegetables and all other ingredients in a large bowl and stir.
- Drain pasta and add to the bowl of mixed vegetables. Toss gently and serve at cold or at room temperature.
