Italian sodas are heavenly, bubbly drinks made up of only two ingredients: flavoured syrup and club soda! Add some fizz to your romantic Valentine’s Day dinner with Italian sodas or Italian cream sodas if you’re feeling extra indulgent.
I began working as a barista at my dad's café when I was 13 years old. Over the eight years that I worked there, I learned to appreciate the different flavour profiles of hot and cold drinks.
One of the most popular summertime drinks on the menu was Italian soda. A fun drink made of soda, syrup and ice. When business was slow, I'd get to experimenting with different flavour combinations. The café carried about 18 different flavours so you can bet I concocted many different variations! As my palate became more refined, I learned to identify delicious flavour pairings that I always recommended to our diners.

Ingredients
Start off with a can of cold club soda or sparkling water. Tonic water has a bitter taste that can compete with the syrup, so I don't recommend using it.
Be sure to use clear, flavoured syrups specifically made for cold drinks. I don't recommend using the caramel or chocolate syrup from your pantry because those are most likely made for topping desserts and melting into warm drinks. You can find drink syrups in large grocery stores in the drinks section.
Italian Cream Soda
Make your Italian soda extra indulgent by adding whipped cream to the top. Italian cream soda is also known as French soda.

Flavour combinations
My dad's cafe had so many flavours that customers would often ask for my recommendations. These are the most delicious and popular flavour combinations we offered:
- vanilla + any fruit
- vanilla + hazelnut
- orange + vanilla (creamsicle)
- coconut + pineapple (virgin pina colada)
- coconut + lime
- chocolate + mint
- mint + lime (virgin mojito)
- almond + cherry
- cherry + chocolate

Italian Soda & Italian Cream Soda
Ingredients
- 1 can club soda or tonic water
- 2 teaspoon strawberry syrup
- 2 teaspoon vanilla syrup
- ice
For Italian Cream Soda
- whipped cream
Instructions
Directions for Italian soda
- Pour ice into a glass then add syrup.
- Pour club soda and serve immediately.
Directions for Italian cream soda
- Follow the steps above then top with whipped cream and serve immediately.
