    Egyptian Mloukhieh

    The dish that inspired a thousand memes.

    Mloukhieh is a simple Egyptian soup that is made from finely-chopped Jute Mallow leaves cooked in a garlicky meat broth. As it is nearly impossible to find fresh mloukhieh in the West, I use frozen. You can me this soup with the protein of your choice: chicken, beef, lamb, rabbit, even shrimp!

    Ingredients
      

    For the stew

    • 1 lb chicken thighs
    • 1 chicken bouillon cube (or 2 cups chicken stock)
    • 2 packages frozen chopped mloukhieh, thawed
    • 2 tablespoon lemon juice
    • 2 tablespoon ghee
    • 2 garlic cloves
    • 1 cilantro bunch

    For the topping

    • ¼ onion finely diced
    • ⅓ cup vinegar

    Instructions
     

    • In a pot, simmer chicken thighs for 10 minutes. Toss out the water and simmer again. Add chicken bouillon cube (or stock) and simmer for 20 minutes.
    • Add mloukhieh, stir and simmer for 15 minutes.
    • Add lemon juice and stir.
    • In a pan, sauté garlic in ghee. Add cilantro and stir for one minute.
    • To make the topping, mix onions and vinegar in a small bowl.
    • Serve mloukhieh with vermicelli rice and onion vinegar sauce on the side.

    • نصف كيلو فخذ دجاج‎
    • مكعب مرقة دجاج واحد ماجي أو كاستين مرقة دجاج
    • علبتين ملوخية مجمّدة ومقطّعة، دايبة
    • معلقتين كبار سمنة‎
    • راسين ثوم مفرومين‎
    • باقة كزبرة وحدة‎

    الإضافات

    • ربع بصلة مفرومة ناعمة‎
    • تلت كاسة خل

    التعليمات
     

    • اطبخي أفخاذ الدجاج على نار هادئة لمدة عشر دقائق. كبّي المي عنّه وحطيه ع النار مرة تانية ليستوي. ضيفي مكعّبات الماجي وخلي على نار هادية لمدة 20 دقيقة‎
    • ضيفي الملوخية وحركيها على نار هادئة لمدة 15 دقيقة
    • ضيفي عصير ليمون وحركي
    • اقلي البصل بالسمنة. ضيفي الكزبرة وحركيهن لدقيقة وحدة
    • ضيفي الكزبرة للملوخية وحركيها. اطفي النار
    • للإضافة، اقلبي البصل بقلب الخل
    • قدميه مع رز بشعيرية والخل على جبنه
