I enjoy snacking on pickles throughout the day. At some point during lockdown, I had run out of my favourite pickles and didn’t feel like lining up outside of the grocery store to get another jar.
So, I looked up how to make homemade pickles and realized that they are ridiculously easy to make and only take about an hour, from cooking to cooling in the fridge to my tummy.
For this recipe, I used cucumber poppers, also known as cutecumbers, because I liked the small size. I have yet to experiment with other cucumber varieties, so let me know your favourite cucumber to use in the comments below.
These pickles are tangy, crispy and pack a punch of flavour. I kept it simple with the ingredients, but feel free to add any seasonings you may like, such as mustard seeds, dill, peppercorns, chilis, and more.

Easy 15-Minute Pickles
Ingredients
- 1 lb cucumbers mini
- 4 garlic cloves
- ¾ cup water
- juice of ½ lemon
- salt
Instructions
- Toss all ingredients into a saucepan and bring to a boil.
- Lower the heat and simmer for 15 minutes.
- Allow to cool before placing in jars. Store in the fridge for up to one week.
