    As you may recall, my dad came home with five large cases of delicious, ripe tomatoes on the vine. After seeking your recipe recommendations, many of you had suggested making tomato soup. Since I’m a very sensual woman who likes to indulge in decadent foods, I decided to turn it up a notch and make classic cream of tomato soup.  

    If you want a lighter version of this recipe, you can substitute milk for the cream, but I strongly recommend sticking with the cream.

    Cream of Tomato Soup

    Ingredients
      

    • Olive oil 
    • 1 onion diced
    • 7-8 cloves garlic minced
    • 1 kg tomatoes ripe
    • 1½ cups chicken stock
    • salt
    • pepper
    • ½ cup heavy cream or whipping cream

    Instructions
     

    • In a pot, sauté onions until softened.
    • Add garlic and sauté until fragrant.  
    • Puree tomatoes and add to pot. Add chicken stock, salt and pepper. Bring to a boil, then lower and simmer for 20 minutes.
    • Turn off heat and puree using an immersion blender until smooth.
    • Strain soup using a sieve to remove seeds and lumps. Return to pot.
    • In another bowl, temper the cream by adding ½ cup tomato soup and mix.
    • Pour cream into pot and mix well. If your cream curdles, puree until smooth.
    • Serve with croutons and a few basil leaves.

    المكونات
      

    • زيت زيتون
    • بصلة مفرومة مكعّبات
    • 7-8 فصوص توم مفروم
    • كيلو واحد بندورة طازجة
    • كاسة ونص مرق دجاج- ملح وفلفل
    • نص كاسة كريمة 35% الطريقة

    التعليمات
     

    • اقلوا البصل بوعاء لحتى ينعم.
    • ضيفوا الثوم واقلوه لحتى تفوح ريحته.
    • اهرسوا البندورة وحطوها بوعاء. ضيفو المرق دجاج والملح والفلفل. اغلوهن، بعدها وطّوا النار وخلوهن لمدة 20 دقيقة. اطفوا النار واهرسوها باستخدام خلّاط لحتى تصير ناعمة.
    • صفّوا الشوربة باستخدام غربال لإزالة البذور والكتل. رجعوها للوعاء.
    • بوعاء تاني، اخلطو الكريم مع نص كاسة شوربة البندورة.
    • صبّوا الكريم بوعاء واخلطوه منيح. إذا تخثّر الكريم، اهرسوه لحتى ينعم.
    • ‎قدموه مع قطع خبز محمّص وشوية أوراق ريحان.
