    Chickpea & Za'atar Salad

    This salad is so hearty and satisfying that it can stand alone as a meal! It comes together so easily; simply open a can of chickpeas, chop all the veggies, combine and add spices!

    Ingredients

    Chickpeas provide the bulk of this salad. It is packed with protein.

    Fresh veggies like tomato, cucumber, bell peppers and red onion. The vegetables are diced so that they're the same size as the chickpeas, making this salad easy to eat with a spoon (my preferred way to eat salad!). Make sure to chop the red onions thinly so they don't overpower the salad.

    Za'atar provides the earthy, nutty, slightly citrusy, flavour to this colourful salad. You can find this spice blend in most international or Middle Eastern grocery stores. Be sure to read the label -- if your za'atar blend contains salt, then you can omit the salt in the recipe below.

    Can I use dried chickpeas?

    Of course you can! But then you'd have to soak them overnight to rehydrate them. For this salad, I recommend using canned chickpeas. Be sure to drain and rinse the chickpeas thoroughly before combining with the vegetables. Put the chickpeas in a colander and let the water run through them for about a minute to wash away the canned liquid.

    If you want healthier canned chickpeas, look for organic low or no sodium chickpeas.

    Can I prepare this salad ahead of time? How do I store leftovers?

    You can prepare this salad a day ahead, but don't salt it until you're ready to serve it so you don't end up with a lot of accumulated water in the bowl.

    I doubt there'll be any leftovers of this delicious salad, but if there are, you can store them in an airtight container for up to two days.

    Ingredients
      

    • 1 can chickpeas drained and rinsed
    • 1 tomatoes diced
    • 2 small cucumbers diced
    • 1 red bell pepper diced
    • ½ red onion diced
    • ¼ cup parsley chopped
    • Juice of one lemon
    • 2 tablespoon olive oil
    • 1 tablespoon dried mint
    • 1 tablespoon za’atar
    • 1 clove garlic minced
    • 1 teaspoon Salt
    • Pepper

    Instructions
     

    • Place all ingredients in a large mixing bowl and toss well to combine.
    • Serve or refrigerate for up to five days.

    • 1 علبة حمص، مصفاة ومشطوفة بالماء
    • 1-2 ثمرة طماطم مقطعة مكعبات
    • 2 ثمرة خيار صغير، مقطع مكعبات
    • 1 ثمرة فلفل أحمر صغير مقطع مكعبات
    • ½ حبة بصل أحمر مقطع إلى مكعبات
    • ½ كوب بقدونس مفروم
    • عصير ليمونة
    • 2 ملعقة كبيرة زيت زيتون
    • 1 ملعقة كبيرة نعناع مجفف
    • 1 ملعقة كبيرة زعتر
    • 1 فص ثوم مفروم
    • ملح
    • فلفل

    • توضع جميع المكونات معا في وعاء كبير وتقلب جيدًا.
